OREO'S CUPCAKES


Hi! We're going to teach you how to do cupcakes! I hope you will like it!

Ingredients (for the cake 12 cupcakes)


  • 2 eggs 
  • Sugar 100 g 
  • 120 g flour 
  • 100 g unsalted butter 
  • 2 tablespoons cocoa powder (I use chocolate unsweetened Value) 
  • 4 teaspoons of baking powder 
  • 1 teaspoon vanilla extract 
  • 120 ml of buttermilk 
  • 12 cookies Oreo grated




Preparation
  • Beat butter softened at room temperature with the sugar .
  • Then add the egg yolks one by one, reserving the whites for later. Now also added vanilla essence .
  • In a separate bowl mix the flour, cocoa and baking powder. Then add it to the dough by sifting together well . Beat again make sure everything is well integrated and now incorporates grated oreo .
  • It is the turn of buttermilk ( recipe to make homemade buttermilk I leave it here below). Bate slowly and gradually incorporating the buttermilk to see the mixture.
  • Finally add the egg whites , which will have mounted stiff . Do it smooth and enveloping , making sure not to drop movements.
  • Divide the dough into capsules and baked at 180 ° for about 20 minutes . Over time, the cupcakes out of the oven and let them tune into the pan 5 minutes before transfer them to a rack to cool completely .




Buttermilk


  • 120 ml. skimmed or semi-skimmed milk 
  • 1 tablespoon lemon juice or vinegar 


Pour the lemon juice or vinegar to milk. Stir and let stand for 10 to 15 minutes at room temperature.
Supposedly will have the appearance of very sour milk or yoghurt.
I've done both with lemon and buttermilk with vinegar, and I have to say I have gone better with the vinegar.

Buttercream ingredients


  • 150 g unsalted butter 
  • 100 g of cheese philadelphia type 
  • 300 g of icing sugar 
  • 12 oreo cookies 
  • 1 teaspoon vanilla (I put him, once again, the emulsifier and vanilla flavored butter Lorannoils) 


Preparation


To prepare the buttercream beat at low speed butter softened at room temperature with the icing sugar, which we will have previously screened. Add the cheese to a slightly higher speed and vanilla essence and finally add the grated oreo.


Tips and Tricks


The buttermilk is a fundamental point for this recipe comes out so juicy , so the mixture of butter, oreo chocolate and make it a rather heavy cake . But beware ! Not I spend with quantities , for then the dough is too liquid , the baking time will be different , it will cost more to be done, the cake will not be as strong , etc. . Nothing happens if you put 130 ml instead of 120, but do not overdo it and put 200 ml for example.
Whites until stiff are another key point. Mount them well , them tight , to make sure to incorporate not drop anything and will contribute to the mass that extra fluffiness .
Oreo amounts are approximate , to consumer tastes . Not necessary to just 12.
